When will LMI Rescue allow me to use it on two monitors so that I can see both of my customer's monitors at the same time spread across both of mine.

There is currently no way within Rescue to achieve this - The host monitors can be indeed displayed on the same screen but they woud not be spread on two separate monitors on the Technician side.
After looking further, this idea has been already suggested. However I will forward it to our Development Team. Unfortunately we do not have any time frame to provide on this -
We hope this can be set on a Development Plan soon!
