How can I get unconverted video ?
What do you mean by "your server"? Is this a server you own or the web server at GoTo?
You can access the recording of the webinar by going to gotowebinar.com and navigate to the Dashboard where you see all of your upcoming webinars. On the left is a vertical column of icons. One of the icons looks like a frame from a film. When you hover over it, the label says "VIDEO LIBRARY." Click that and you will see all of the recordings for your webinars. The three dots next to each recording is a drop down menu that includes "download."

Do you mean an unconverted video of the recording of a webinar?
Or do you mean an unconverted video that you want to use within a webinar?
For a recording of a webinar, you can have the video saved to your computer. That gives you a raw video that must be converted before you can use it. I prefer to have the webinar recorded to the GoTo cloud, where I can download it and edit it in my video editor.
