Even if you could, which I doubt is possible, the IP address is still going to show up in the proxy logs. I would venture to guess that an IP address, coupled with the amount of traffic and the length of a connection would raise a red flag despite the lack of a URL showing logmein.
My suggestion is to be upfront about your use of LogMeIn and show them that the web connection is secure. They aren't going to know what you are doing after you make your LogMeIn remote connection - just that you made a remote connection.
