How is it possible for activity to disappear from our GoToMyPC activity log (or be deleted)? I have a screenshot of the timeframe in question from over a year ago. There are 2 sessions and 2 attempts to access PCs that no longer appear in the record. Could someone have manipulated/deleted the record(s)?

@Gary54321 Session history can potentially date back further than 1 year, but that's the minimum we should be saving the data. There should not be any missing logs there at all.
Do you have a screen shot of the data gap, and/or have the specific dates/times of sessions you are seeking?
Activity history for personal subscribers dates back 12 months, while Corporate accounts retain 90 days of data. Were you looking for info within this time period?
